MAE KRUA Gold Label Light Soy Sauce 700ml

Mae Krua Light Soy Sauce is a Thai light soy sauce produced in Samutprakan, which has been the standard for authentic Thai cuisine for over seventy years. It contains soybeans, wheat flour, salt, and sugar, which gives it its characteristically mild and salty taste – milder than Western soy sauces. It is used in stir-fries, marinades, dipping sauces, and as a versatile seasoning for dishes, especially Thai noodles and rice.

*FLAVOR

The sauce has a distinctly salty profile, but without the harsh aggressiveness characteristic of Asian soy sauces – the sugar present in the recipe softens the raw salt, creating a more balanced taste. Umami from fermented soy is discernible, with depth from sweet molasses notes, almost citrusy freshness. The consistency is light and fluid, allowing the sauce to penetrate dishes evenly without darkening them. The intensity is moderate – sufficient for rich flavoring without overpowering.

*USAGE

The sauce works well wherever salt and umami are needed without dark colors. It is perfect in:

  • Pad see ew and pad kee mao (drunken noodles) – traditional Thai noodle street foods
  • Stir-fries with vegetables, poultry, or meat – especially with broccoli, pak choi, asparagus
  • Marinades for meat and fish – as a base along with garlic and chili
  • Coconut and buttermilk soups – as a subtle seasoning without changing the color
  • Fried rice – instead of traditional fish sauce for a vegetarian version
  • Dipping sauces – mixed with chili, lime, and garlic

*STORAGE

Store the bottle in a cool, dry place, away from sunlight and moisture – typical kitchen cabinet conditions are ideal. After opening, store the tightly sealed sauce in the refrigerator, where it remains fresh for several months. Avoid storing at room temperature for extended periods after opening, as heat can affect the quality of the flavor.

🌿 FLAVOUR AND AROMA

The sauce has a distinct, yet delicate, salty flavor profile with a slight fermented soy note and a subtle sweetness that mellows the salt. The umami from fermented soy is discernible in a clean, dry aroma, with hints of molasses and citrus freshness. The consistency is light and fluid, allowing for even flavor penetration without darkening dishes; the intensity of the flavor remains moderate.

Dishes you can use it in:

Mae Krua Light Soy Sauce is a cornerstone for seasoning dishes in Thai and Asian cuisine. Thanks to its light consistency and balanced flavor, it allows for quick seasoning of wok dishes, marinades, and ready-made meals without excessive coloring. Below are the most common uses:

  • Pad See Ew — a traditional Thai stir-fried noodle dish, the sauce adds umami depth and a subtle saltiness without heavy coloring
  • Thai Fried Rice — enhances the dish's flavor, combining ingredients and adding a delicate saltiness without overpowering
  • Meat Marinades — a base for marinades with garlic, chili, and other aromatics that penetrate the meat
  • Vegetable Stir-fries — quickly stir-fried vegetables in a wok with even flavor distribution and umami
